Creamy Sungold Tomato Orzo. Truly 5 ingredients, vegan, one-pot.... all the buzz words. It may be September but if I can still buy tomatoes at the market summer ain’t over. Ingredients: 1lb sungold tomatoes 3 shallots 3 cloves garlic 1/2 tsp salt 1/4 cup olive oil 10 - 12 ounces of orzo Préparation: 1. In a large heavy bottomed pot add the sungold tomatoes, shallots, garlic, salt and olive oil. Cover and cook on medium-low for 30-40 minutes or until all ingredients are extremely tender. Remove from heat and blend until smooth. 2. Cook Orzo to al dente in heavily salted water and transfer immediately to the blended sauce with 1/4 cup or so of the pasta cooking liquid. Stir to combine and taste for seasoning. Adjust salt if desired. 3. Serve immediately and garnish with freshly grated parmesan and black pepper.
