Better than heinz tomato soup. For the soup 1 tin high-quality tomatoes (I use tinned whole cherry for sweetness) 300g on the vine tomatoes 1 medium carrot 1 red onion 1 bulb garlic 1 red chilli (or less for less warmth) 1 stock cube (I used chicken) Fresh thyme Salt and pepper Fresh basil. Optional: sugar and balsamic vinegar. 1. Preheat your oven to 180c fan. In a deep tray (deep enough to hold liquid) place halved tomatoes, one red chilli, diced carrot, diced red onion and a whole garlic clove cut horizontally in half. Add a good plug of olive oil, some fresh thyme and a pinch of salt and pepper. Roast for 15 minutes then remove the stem of chilli and woody stems of thyme, rubbing them between your hands to add back in the leaves. Tip in a tin of cherry tomatoes, fill the tin back up with water and tip into the tray along with 1 stock cube, turn the oven down to170c fan and roast for another 10-15 minutes. 2. Remove the garlic bulb, and take 4-5 roasted garlic cloves and add them back into the tray. 3. Blend the mix into the smooth soup, adding a little salt pepper and sugar if you need it.
