We’ve been migrating our wine finishing operations into extra large format casks whose balance & low evaporative loss better suits our intense Texas climate. Our upcoming 2022 Blue Corn Bourbon release has rested in Grenache and Cabernet puncheons from California and Washington. These casks are so large we have to pump out of them in place in the warehouse, rather than in our dump trough like a standard-sized barrel. This is quite a feat, but we think the fruity and luscious final result is well worth the effort.
