🎄Vegan Gingerbread Cheesecake🎄 ⁠ The holiday season calls for all things gingerbread! 🎅🎁 This Vegan Gingerbread Cheesecake is ultra creamy, rich, and easy to make! 😋 It takes just 5 minutes to prep and is a no-bake recipe, making it the perfect holiday dessert! 🙌 Made vegan, dairy-free and egg-free with a gluten-free option ✨ Grab the recipe below 👇 Made with Let’s Do Organic Heavy Coconut Cream 🥥 by our friend Britt of @the_bananadiaries ✨ ⁠ Ingredients: Crust: 1 250g package Biscoff Lotus cookies or vegan graham crackers 1/3 cup (75 g) vegan butter*, melted & cooled to room temperature Cheesecake Filling: 16 ounces (454 g) vegan cream cheese, room temperature 8 ounces (240 g) vegan dairy free yogurt 3/4 cup (180 g) molasses 1 cup (250 mL) Let’s Do Organic Heavy Coconut Cream, room temperature 1 cup (200 g) organic granulated sugar 1 tbsp vanilla extract 2 tsp ground ginger 1 tsp ground cinnamon Optional toppings: vegan coconut whipped cream, gingerbread cookies Instructions: 1.Measure out ingredients. Line an 8′′ springform pan with parchment paper on bottom & lightly grease edged. 2. Blitz or pulse lotus cookies in a food processor or blender until fine crumb. Pour cookie crumbs into a medium bowl & add in melted vegan butter. Mix until combined. Then press dough into the bottom of springform pan. Use the back of a spoon to create a smooth surface. Place crust into freezer while making filling. 3. In a stand mixer with whisk or in a large bowl with a hand mixer, cream together cream cheese, yogurt, heavy coconut cream, sugar & vanilla extract until fluffy & consistent, about 3-5 mins. Then add in molasses, ginger, & cinnamon, & mix again until combined, about 3 mins. 4. Remove cookie crust from freezer, & pour cheesecake filling into crust. Smooth top with a spoon or offset spatula. 5. Cover the top of cheesecake with plastic wrap & place into freezer to set for 4 hours, or overnight. 6. To serve, remove cheesecake from freezer. Carefully remove springform pan, place cheesecake onto plate and top whipped cream & gingerbread cookies.
