Ingredients: Small slider buns 1 can Spam Figgy Pudding, cut into 1⁄4 inch slices 1 can pineapple slices, 1-2 tbsp pineapple juice, reserved 2-4 tbsp mayo or butter 1/4c sweetened shredded coconut 2 tbsp Soy Sauce, divided 3 tbsp Japanese\ BBQ Sauce 2 tsp Siricha A handful of greens Tart cherry jelly, -optional To a pan over medium heat add butter and melt, if using mayo or butter on the bread and add the coconut, place cut side down and begin to toast the bread about 2-3 minutes. Clean your pan if needed then add the soy sauce, pineapple juice and pineapple slices, cook until the pineapple starts to soak up the liquid, about 2-3 minutes on each side. Remove from the pan and set aside. Next add remaining soy sauce, japanese bbq sauce and sriracha, fry the meat in the sauce for about 3-4 minutes on each side. Assemble the sandwich with one toast piece on bottom, with a layer of greens, Spam Figgy pudding slices, a pineapple topped with the toasted coconut slice. Serve immediately and enjoy!
