👇🏽RECIPE👇🏽 PINAKBET or Pakbet is a very popular Filipino dish that consist of mixed vegetables sautéed in shrimp paste or bagoong alamang. It can also be cooked with pork, shrimp or both. Hated it as a kid because my mom forced me eat the vegetables but now I absolutely love it especially the funky aroma! 😄🤷🏻‍♀️ NOTE: -I used store bought sautéed shrimp paste in a jar. It's already cooked and seasoned with spices and sugar. -Back home in the Philippines, I remember my mom cooking it with raw bagoong from the wet market. - I used a cup of water but add more if you want it more saucy. INGREDIENTS: ❤️ 1/2 lb pork belly strips ❤️ 4 garlic cloves minced ❤️ 1/2 of a small onion chopped ❤️ 2-3 tbsp sautéed shrimp paste or bagoong. I used the brand @barriofiesta ❤️ 1 cup hot water ❤️ 1 medium sized Chinese Eggplant sliced into 1 inch thick ❤️ 1/4 of a calabasa sliced into large cubes ❤️ 1 medium sized Bittergourd or Ampalaya sliced into 1/2 inch thick ❤️ 6 pieces of okra sliced in half on an angle ❤️ 1 cup of Long Beans (String Beans works too) sliced into 3 inch length. ❤️ Fish sauce to taste ❤️ 2 tbsp cooking oil 1. Heat wok or wide saute' pan over medium high heat. Add cooking oil. 2. Add pork belly strips and saute until no longer pink. 3. Add garlic, onions and tomatoes and sauté until fragrant about 2-3 minutes. 4. Add bagoong and stir. 5. Add hot water. 6. Cover and cook for 15 minutes until pork is fork tender. 7. Add Calabasa, stir, cover and cook for 5 mins. 8. Add ampalaya, eggplant, sitaw, okra and stir. Cover and cook for 5-7 mins or until veggies are tender. 9. Lastly finish with fish sauce and stir. 10.
