BEST EVER SIN CARNE TACOS WITH PINEAPPLE SALSA AND COCONUT KEFIR CREMA You will need FOR THE TOFU 1 fajita spice mix 2 heaped tbsp corn flour 1 tbsp olive oil 225g smoked tofu, pressed and cut into dice FOR THE PINEAPPLE SALSA Around 1 cup of diced pineapple 1 roasted red pepper from the jar 1/2 red onion 2 tsp sriracha 1 lime, zest and 1/2 juice Pinch of salt and pepper FOR THE COCONUT KEFIR CREMA 1/2 avocado Small fistful of coriander (or use parsley) 1 spring onion 1-2 tsp agave 5 tbsp coconut kefir from @cocosorganic or use 3 tbsp coconut yoghurt 1 tsp garlic puree or 1 chopped clove 1 heaped tbsp jalapeños from a jar and 1 tbsp brine Tortillas and crispy fried onions to serve (non negotiable, TRUST me) METHOD 1. Mix the corn flour with equal parts of the fajita spice mix. Season with salt. Cut the tofu into 2x2cm pieces, toss in 1 tbsp olive oil then toss into seasoned flour until evenly coated. Air fry, or bake at 190c fan for 15-20 minutes until golden and crisp. 2. Dice the pineapple, red pepper and red onion finely. You don’t want any large pieces! Mix with sriracha, grate in the zest of one lime and 1/2 the juice. Season with salt and pepper. 3. Using a blender, whizz together the coconut kefir creme ingredients and adjust to taste, some will like more jalapeños, some will want a little more salt. Don’t be afraid to play around with this. 4. Warm the tacos and load up with crispy tofu, salsa, creamy crema and top with fried onions. #plantbased #vegan #healthyrecipes #tacos #veganrecipes
