Ingredientsā
1 small celeriac, peeled and julienned ā
2 parsnips, juliennedā
2 green apples, juliennedā
6 clementinesā
100 g watercressā
For the dressingā
2 tablespoons vegan fish sauceā
3 tablespoons lime juiceā
2 tablespoons clementine juice ā
1 tablespoon tamarind pasteā
1/2 shallot, finely dicedā
1 red chilli, finely diced, plus extra to serve ā
1/2 teaspoon sugar (optional)ā
1 tablespoon chopped coriander, plus extra sprigs to serveā
ā
Method:ā
1) Julienne all your vegetables and place them in a large bowl. ā
ā
2) To prepare the clementines, use a small serrated knife to peel away the skin and membrane from the edge of the fruit, then slice them into rounds. Add to the bowl. ā
ā
3) Mix together all the ingredients for the dressing, season to taste and add to the bowl. Allow to marinade for between 10-20 minutes. ā
ā
4) To serve, scatter the watercress on a large serving platter, top with the shredded vegetables, and garnish with extra chillies and coriander sprigs. ā
