Welcome to MEZCLA: the festive edition, in which I cook up a feast of recipes from my book. Not necessarily for Christmas, but also not not necessarily for Christmas, yaknow?! You’ve probably got all the inspiration you need for the classic roast set up and I’m not necessarily saying you shouldn’t go in that direction, this is just a little inspiration for something a bit different if you feel like veering off the beaten track.
Think: Chocolate, coffee and coconut roll, Cranberry, tangerine and cinnamon mezcalitas, Red pepper tartare, Scallops with curried onions, Oysters with tangerine mignonette, Confit trout, Ceamy potato gratin, Curried sweet potato gratin, a couple of zingy salads and to top it all off, a stunning trifle ablaze with the light of a thousand sparklers.
