Quick & Easy Weeknight Meals for 2: Sun Dried Tomato Chicken 8 oz chicken breast 1 chopped shallot 3-5 minced garlic cloves 1 c chicken broth 1 T sun dried tomatoes 1 T unsalted butter 1/2 c chopped spinach Sliced mozz cheese 1 tsp thyme 1 tsp oregano 1/4 tsp black pepper I season my chicken with garlic powder, onion powder, paprika, thyme, oregano, salt, and pepper. I sear my chicken on both sides for about three minutes per side and remove from pan. I add chicken broth, sun-dried tomatoes, spinach, butter, thyme, oregano, and pepper until my spinach separates. I add my chicken back to the pan and let cook for about three minutes per side or until cooked through.
