Quick & Easy Weeknight Meals for 2: Shrimp Alfredo Pasta 6 shrimp (165g) 1 diced shallot 1 tsp minced garlic 1 Roma tomato 1/4 c low sodium chicken broth (50ml) 1/4 c Alfredo sauce (65g) 1 T lemon juice 3/4 c asparagus 2 T Parmesan cheese (10g) 160g Protein pasta Few dashes red pepper flakes Few dashes black pepper 1/4 tsp garlic powder 1/2 tsp oregano I season my shrimp on both sides with salt, pepper, & garlic powder. I sear on each side for about 1-2 mins per side and remove. I spray my pan with olive oil and add my shallots and garlic cooking for about 3 mins, then I add my tomato. Next I add my chicken broth, Alfredo sauce, & lemon juice, seasoning with red pepper flakes, pepper, garlic powder, & oregano. I add my asparagus and let cook for about 3 mins adding about 1/4 c pasta water.
