’Tis the season for firing up the grill and making grilled chile-rubbed flank steak with a side of Chermoula and corn relish. It’s a variation of a recipe I’ve made in cooking classes for several years and I know it’s a crowd pleaser in my house. Grilling tip: To oil my grill, I use old kitchen towels or paper towels and add a little avocado oil. Quickly and carefully wipe down the grates with the oil-soaked towel before adding meat or fish. Hold the oil-soaked towel with grilling tongs to be careful, or just work super fast (and still be careful)! One more tip. I’ve heard too many stories of kids and adults who’ve ended up in the hospital because a metal piece of a grill cleaner got lodged in their mouth or throat. You can find these made from other materials, like good old fashioned wood or a hearty sponge material.
