Silken Tofu - perilla oil, sea moss
We make our tofu in-house, soy milk and all. If you’ve never had fresh tofu before, it is nearly unrecognizable from store bought tofu as it is far sweeter and has a deeper soybean flavor. Our tofu is made moments before guests arrive and is served chilled on a bed of ice. Perilla oil and dried sea moss give the dish a subtle brininess and herbaceous complexity that complements the tofu perfectly while letting it remain the star of the dish.
