~ a very simple peach cake ~ my go to this summer... literally about to turn into one.
What you need !
160g unsalted butter, room temperature
150g raw sugar
3 eggs, room temperature
Rind of 1 lemon
Generous squeeze of lemon juice
1 tsp vanilla extract
150g spelt flour
50g almond flour
Pinch of salt
2 tsp baking powder
2 tbsp milk
2-3 ripe peaches, washed and sliced
1. Preheat the oven to 180*C. Line a round 20cm cake tin with baking paper and butter/sugar the edges
2. Beat the butter and sugar together until creamy
3. Add the eggs, one at a time. Followed by lemon rind, vanilla and juice
4. Slowly mix through the flours, baking powder and pinch of salt. Mix through the milk
5. Pour mixture into cake tin and arrange peach slices over the top, gently pressing them in
6. Bake for 55-60 minutes. The edges should be bubbling and starting to caramelise. Every oven is different so keep an eye from the 50 minute mark 👀✨
