This goes out to all my egg white haters. We see you 🫂 I get it... you might hate the idea of raw egg in your drink. But that doesn’t mean you can’t enjoy egg white cocktails the way they’re meant to be. Aquafaba (aka chickpea liquid) is a great alternative. It’s plant-based, odorless in cocktails, and does the job just as well. The recipe I used aquafaba in this Amaretto Sour, comes from @Chris. It’s essentially a riff on Jeffrey Morgenthaler’s Amaretto Sour recipe and it’s still silky smooth with that perfect head of foam. AMARETTO SOUR ——————————— • 0.25oz 7.5ml simple syrup (optional) • 0.25oz 7.5ml Campari • 0.75oz 22.5ml high-proof bourbon • 1oz 30ml lemon juice • 1.5oz 45ml amaretto • 1 egg white or 1oz aquafaba Instructions: Combine all ingredients in a shaker tin with ice. Shake to chill. Strain out the ice, then shake again without ice (reverse dry shake) to emulsify. Double strain into a chilled cocktail glass. Garnish with drops of bitters on the surface.
