Meet our Paprika Pepper Partner Farmer, Péter! (Say it five times fast!) part 3/3 
 Péter (yes, Péter our paprika pepper partner farmer) grows two varieties of heirloom peppers: Szegedi 178, known for its deep red color and vibrant heat, and Noble Sweet, known for its rich fragrance. 
 After harvesting the peppers, Péter carefully cures them in sukjus, long red stockings lovingly called “salami bags.” Curing helps bring the sugars to the surface before the peppers are meticulously dried and ground in small batches. During the drying, Péter sleeps at the farm, waking up throughout the night to rotate the peppers so they dry evenly. 
 The result? Two paprikas — one hot, one sweet — that are the source of an incredible amount of pride for Péter and an absolute honor to bring to you. Please check back tomorrow for more posts!
