SPRING ROLLS Pre-bought spring rolls Mint Lettuce Sweet Chilli mixed with Vegan Fish Sauce and Lime PLANT-BASED LARB 400g plant-based mince 1 tbsp sticky rice, toasted and ground 1 medium red onion, thinly sliced (or 3 shallots) 1 Thai red chilli, chopped 1 stalk spring onion, sliced 1 tbsp vegan fish sauce 1 tbsp caster sugar Juice of 1 lime 1/4 cup chopped fresh Thai basil 1/4 cup chopped fresh coriander 1/2 cup chopped fresh mint Cucumber, to serve Toast raw sticky rice in a pan for 5-10 minutes til golden brown and grind up in a mortar and pestle til you have a coarse powder. Mix fish sauce, sugar and lime juice in a small bowl.
