On weekends, we make a huge batch of banana protein pancakes with leftover very ripe bananas.
It’s simple - just bananas, eggs, protein powder or collagen, baking soda, cinnamon, vanilla, a small amount of gluten-free flour to get the texture right.
Unlike other pancakes, these are delicious plain and cold - they’re naturally sweet and the banana keeps them the “m” word.
Have fun and let them make it a “pancake pizza” with nut butter or yogurt as the sauce and berries on top, or just eat separate - you do you!
And because my boys are growing and in lots of sports- we throw in an extra meat stick for good measure.
