MANGO PANCAKE STACK WITH DATE CARAMEL These are simply the easiest but most INSANE pancakes to make. Using @cocosorganic mango and passion fruit kefir in both the pancakes and the gorgeous caramel, I love how versatile this product is. This is full gut and tastebud love. ADD this recipe to your weekend brunch. You will need (to serve 2 hungry people) 150g self-raising flour 1/2 tsp baking powder 1/4 tsp bicarb soda 1 tbsp sugar or sweetener 1/2 tbsp vanilla extract 50-100ml plant-based milk 100ml mango and passion fruit kefir @cocosorganic Optional: 1 tbsp milled hemp seeds For the caramel 100g pitted dates 1 tsp white miso 80g diced mango 50-80ml mango and passion fruit kefir @cocosorganic 1 lime Put the pitted dates onto boil with 1/4 tsp bicarb soda, simmer for 5 minutes then drain. Blend together with fresh mango, miso and kefir until you have a smooth runny caramel. Taste and adjust, even adding a little sugar or salt to your preference. Simply combine the dry pancake mix together and fold in the wet. Loosen with a little more plant-based milk if needed. Sit for a few minutes then heat a non stick pan. Pour 2 tbsp batter for each pancake into the pan, cook on either side for 2-3 minutes until risen and fluffy. Serve the pancakes with the caramel sauce and fresh mango, grating over the zest of a lime to finish. #veganrecipes #healthyrecipes #pancakes #plantbasedrecipes
