Owner and Chef Josh Espinosa gave me front row access as he crafted his reimagined Filipino classics. He started us with his Kuhol, or Filipino escargot basted in coconut butter. Then Filipino ceviche on fried wontons. And yes Kare Kare braised ox tail, in a bed of masa corn meal, wrapped in corn husk, covered in Kare Kare peanut sauce and sprinkled with dehydrated bagoong flakes. Next level. Then some crab fried rice in crab butter which was fire! And the coup de grace for me was his Kaldereta bone-in lamb shank. So much tender juicy savory goodness. And of course we had to end with the best Ube cheesecake ever, and a Ube sour cocktail.
