For some of you who are also following me @annerie6, you may have already seen that my cousin from Vancouver was here in Toronto for a visit recently. As a warm welcome for the #seafoodlover in him, I wanted to prepare a special #buttery, #meltinyourmouth #salmon and #pasta dinner with the help of my local friends @honeyfieldscanada. INGREDIENTS: 2 cups cooked pasta of choice 1 cup baby spinach 1/2 cup feta cheese 2 large salmon fillets @freshwagon.ca 2 tbsps unpasteurized pure honey @honeyfieldscanada 1 tbsp fresh lime zest 1 tbsp fresh lime juice 2 tbsp plain Greek yogurt 2 tbsps olive oil 1 tbsp garlic or shallots, finely minced 1 tbsp basil pesto, homemade or store-bought Sea salt and pepper to taste 1 tbsp dried parsley *optional red chili flakes INSTRUCTIONS: 1. Marinade salmon fillets in honey, yogurt, lime juice, lime zest, 1 tbsp olive oil, and salt and pepper. Top with pesto and chili flakes and place in "foil envelopes" in an airfryer for about 8 minutes. 2. Sauté baby spinach in minced garlic or shallots and remaining olive oil. Add in cooked pasta and season with salt and pepper to taste. 3. Remove cooked salmon and plate with pasta. Garnish with feta and parsley and serve immediately. Enjoy!
