(Recipe below.) • They feature organic, grass-fed dairy Strawberry Lemon Shortbread Ice Cream from @findcosmicbliss and a strawberry jam sandwiched between two lemon shortbread cookies. #ad • INGREDIENTS: 1 1⁄2 Pints Cosmic Bliss Organic Strawberry Lemon Shortbread Ice Cream • SHORTBREAD INGREDIENTS: 1⁄2 Cup (1 Stick) Butter, Softened 1⁄2 Cup Granulated Sugar 2 Tablespoons Milk 1 Egg 1⁄2 Teaspoon Vanilla Extract Zest of 1 Large Lemon 1 1⁄2 Cups All-Purpose Flour 1⁄4 Teaspoon Baking Powder • STRAWBERRY JAM: 1 Cup Chopped Strawberries 1 Tablespoon Lemon Juice 2 Tablespoons Granulated Sugar • METHOD: Make shortbread cookie layers. In large bowl, cream together softened butter and sugar. Add milk, egg, vanilla extract and lemon zest. Stir to combine. • Stir in flour and baking powder until dough forms. Divide into two balls, wrap in plastic wrap and place in fridge to chill for one hour. • Meanwhile, make strawberry jam. Add chopped strawberries, lemon juice and sugar to medium saucepan. Cook on medium until it's the consistency of thick jam. Pour in bowl and set aside to cool completely. • Preheat your oven to 375 degrees. Line an 8x8 inch pan with parchment paper. Remove one half of dough from refrigerator and press into pan. Use fork to poke holes all over dough, then bake for 10 minutes. • Once baked, carefully remove from pan and place on wire rack to cool. Repeat this process with second half of dough. Set out ice cream so it will begin to soften. • Wash and dry square pan. Line inside with several layers of plastic wrap. Place one of the shortbread squares back into bottom of pan. Then, scoop ice cream on top and use spoon to spread into one even layer. • Spread on cooled jam. • Top with remaining shortbread and cover tightly with a few more layers of plastic wrap. Freeze 6 hours or overnight. • When ready to serve, discard wrap and remove from pan. Allow to soften for about 5 minutes, then use a big sharp knife to slice into 8 bars.
