This is my go-to Paloma batch recipe for bartending or serving when I host at the House. Paloma (Batch) —————————- • 11⁄4 cups (10 oz) grapefruit juice • 5 tbsp (2.5 oz) lime juice • 5 tbsp (2.5 oz) simple syrup • 11⁄4 cups (10 oz) blanco tequila • 1.5 oz cold water • Club soda, to top Instructions: 1. Combine the citrus juices and simple syrup in a mixing glass and stir. 2. Pour into a clean 750 mL bottle or pitcher. 3. Add the tequila and 1.5 oz of cold water. We add cold water to account for the dilution you’d get from shaking, so the batch is already balanced before serving. 4. Seal, shake or stir to combine, and chill. To serve: Pour ~5 oz of the batch over ice and top with 2–3 oz of cold club soda. Garnish with a lime or grapefruit wedge.
