Diva Q Pitmaster Dinner down Under 🇦🇺 When you get asked to take over a kitchen at @thequeclub It’s always an honor. The food served out of this kitchen is incredibly high-level. For my Pitmaster dinner I packed the menu with things I love to eat - things I’ve shared with my friends my family my loved ones because bringing people together through food from @traegergrills is something I love doing more than anything 🔥 Here was the menu using many in season Australian vegetables and locally sourced ingredients : 🔥 Smoked cocktails Diva Q @whistlepigwhiskey Cherry & grilled orange Old Fashioned & smoked lemonade. 🔥 Smoked & seared duck breast crostini topped with smoked cherries whipped goat feta, herbs and smoked garlic 🔥 Hanger steak brochettes with smoked Pearl onions and peppers on my fluffy focaccia with smoked garlic rosemary and sun dried tomatoes. I love how the resting steak juices drip into the focaccia 🔥 Grilled pear, smoked Gouda, red onion and bacon lardons salad with white balsamic and buttery chive & aged cheddar cheese cornbread. 🔥 An absolutely to die for Slow roasted porchetta with herb lemongrass and shallot stuffing with stellar crispy pork skin. 🔥 A fun take on Mexican street corn casserole with a recipe from Chef Fabio 🔥 Plus You always need more greens so we added grilled & roasted Brussels sprouts with black vinegar glacé and smoked almonds with peppery greens. 🔥 And to finish this luxe bbq and grilled dinner - domes of whistlepig banana cheesecake with smoked banana cream, brûléed bananas and crunchy bits of goodness. 🔥 We also paired some lovely Australian wines with the courses. It was wonderful to be surrounded by so many happy people. 🔥 This entire dinner was made possible by the Que Club team and owners Pam & Andrew I cannot thank them enough. It was a dinner to remember.
