SPANAKOPITA CUPS • I’ve definitely got Summer on my mind after making this recipe🇬🇷 - Traditionally, Spanakopita (Greek Spinach Pie) is made with a cheese and spinach mixture wrapped in phyllo dough😋. I wanted to make a version that was a bit lower in carbs and add a high fiber twist by swapping out the phyllo dough with a whole wheat high fiber wrap and form them into individual cups! Depending on which high fiber wrap is your favorite, this swap can add ~12g of fiber to your plate 🍽. This will not only allow you to enjoy the taste of Greece in a quick and delicious low carb way but will leave you satisfied for much longer due to it’s fiber content👏🏼. These are great for lunch when paired with a Greek salad🥗 or a quick snack that will teleport you to a beach 🏖in Greece in no time💙 Which Greek recipe should I recreate next? Share below⬇️ - Ingredients: • 10 oz. Baby Spinach • 1 cup Feta Cheese • 1/2 cup Low-fat Ricotta Cheese • 3 tbsp Red Onion • 3 tbsp Scallion • 1/3 cup Dill • 1 Egg • 4 tbsp Olive Oil (for sautéing & to brush tortillas) • 1/4 tsp Salt • 1/4 tsp Pepper • 12 High Fiber Wraps Directions: 1. Preheat oven to 400 2. Brush muffin/cupcake pan with oil and place high fiber tortillas into cups 3. Rinse and spin dry spinach very well & set aside 4. In a skillet, add oil and sauté onions and dill for about 5-7 minutes. Then add 10oz of spinach, add seasoning and cook until wilted 5. Put spinach and onion mixture into a bowl to cool slightly for a few minutes and then add crumbled feta, low fat ricotta and 1 beaten egg. Mix until thoroughly combined. 6. Scoop out cheese and spinach mixture and place into each tortilla cup 7. Fold top of tortillas closed and lightly brush the top of your tortillas with a little bit of oil so that it doesn’t burn and stays sealed while cooking (you can place a baking sheet over it while cooking to keep it sealed for the first 15 min to get a cupcake effect) 8. Bake at 400 for 25 min 9. Once it is fully cooked and golden brown, take pan out of the oven and let the Spanakopita cups rest for about 3-5 min 9.
