SAVE this ROASTED MUSSELS & POTATO CHIP recipe for then next time you need a quick & impressive appetizer! I served these last Sunday to my parents, kiddos and hubby & they LOVED them. The pairing of mussels and potato chips was inspired by a restaurant my husband & I used to got to when we were dating (over 20 years ago) in the West Village called Cafe Bruxelle. Cafe Bruxelle served only mussels, prepared in a dozen different ways, and frites (fries). Sadly after 30 years, it closed in 2010. Tray by @juliskaofficial Ingredients: 25 mussels cleaned well 2 tbsp olive oil 1/4 cup white wine 2 tbsp jarred Calabrian chili pepper or hot sauce of your choice 4 oz of salt & vinegar potato chips CRUSHED 1/3 cup chopped parsley 2 garlic cloves minced or grated -Preheat the oven to 450F -Place a colander over a pot of boiling water. Place mussels into the colander and cover with a lid. Once the mussels open remove from heat and set aside. Alternatively, you can add 1/2 inch of water to a large pan, bring the water to a boil, add the mussels and cover with a lid. Once the mussels open, remove from heat immediately. -To a 16 X 9.5 baking dish add 1 tbsp of olive oil and the white wine. -Detach the top of the mussel and place the shell containing the mussel in the baking dish. -To a medium sized bowl add the potato chips, parsley, garlic and remaining olive oil. Mix well. -Top the mussels with the potato chip mixture. -Place in the oven for 6-8 minutes or util the chips start to turn golden brown. -Serve warm!
