When I was browsing through some magazines recently, in search of some fall decor ideas, I came across this incredible recipe and, as usual, couldn't wait to give it a "#healthynre makeover".
These "new-fashioned oats" @southernlivingmag inspired my healthy baked pecan and banana oats pie, featuring @waglermapleproducts. It's not only a wholesome way to start your day, but also the perfect #guiltfree

INGREDIENTS:
3 tbsps EVOO
3 very ripe bananas
1 large egg
2 cups oat milk
1/3 cup peanut butter (or almond butter)
1 1/2 tsp cinnamon
1 tsp nutmeg
3/4 tbsp pure maple syrup @waglermapleproducts
1 tsp maple sugar @waglermapleproducts
1 tsp baking powder
1 tsp vanilla extract
1 tbsp hemp seeds
1 tbsp flax seeds
1 tbsp chia seeds
A pinch of sea salt
3 cups rolled oats
1/2 cup pecans, finely chopped
INSTRUCTIONS:
1. Preheat oven to 350°F and grease a 10-inch pie pan with 1/2 tbsp of EVOO.
2. Mash 2 bananas with a fork in a large bowl and add in all the ingredients (only 1/2 cup of the finely chopped pecans and 1 tsp cinnamon) and mix until smooth.
3. Pour the batter into the greased pan and tap it on the counter to ensure even distribution.
4. Bake for 35 to 40 minutes until the mixture have set and is slightly golden.
5. Remove from the oven and cool for 5 minutes. Garnish with the last banana (sliced), a sprinkle of cinnamon, the remaining chopped pecans, and an extra drizzle of maple syrup. Serve immediately (perhaps with a scoop of your favourite nice cream?). Enjoy!
