Do yourself a favor and whip up a batch to enjoy for a cozy breakfast, dessert, or an afternoon pick me up! 🍁 FOLLOW @feed.your.soul.sari for more healthy recipes like this and COMMENT below your favorite thing to bake this fall! #recipe details -1 cup almond flour -1 cup gf oat flour -1 tsp baking powder -1/2 tsp baking soda -pinch of salt -1 tsp pumpkin spice -1 cup mashed banana (ripe) -1/2 cup pumpkin purée -1/4 cup @dvashorganics date syrup -2 eggs -1 tsp vanilla extract -1/2 cup @lilys_sweets milk chocolate chips Method: Preheat your oven to 350° F. Line a muffin tin with paper liners sprayed with nonstick spray. In a bowl, whisk together your banana, pumpkin, and date syrup. Stir in your egg and vanilla extract. In a separate bowl, stir together your flours, baking powder, baking soda, pumpkin spice, and salt. Pour your dry ingredients into your wet ingredients and stir gently until just combined. (Do not overmix). Then fold in your chocolate chips. Distribute your batter evenly among the muffin tin and bake for 20-25 minutes until a toothpick comes out clean. Let cool for 5 minutes in the pan, then remove and finish cooling on a wire rack (you don’t want the muffins to sweat in the pan!).
