We love a good crispy smashed potato or sweet potato around here as the base of a great bowl. Philly Cheesesteak Skillets, my Queso, a poached egg, taco meat. You name it.
Boil small yellow potatoes until they’re fork tender. Drain and cook until you can handle them. Sprinkle with salt, then smash them between two sheet pans or cutting boards.
Preheat a griddle to medium high heat and spritz with avocado oil. Add the smashed potatoes and let cook undisturbed for 4 to 6 minutes. Season with more salt and pepper or your fave seasoning blend (HiaH Fries blend for me please 😍). Flip and press with a spatula. Crisp up on the other side for 4 to 6 minutes longer. Enjoy!
