This dish is a prime example of my love for Italian cuisine. It’s also a great example of how frustrating it can be. When you spend time with people like @sarahcicolini who truly cares so much about every element of the most simple dish on her menu you can fall in love with the cuisine. It’s so easy to have this dish all over Roma and honestly- sometimes it can be just meh. Her version is wildly delicious and texturally so pleasing. The way she handles each ingredient has a purpose.
