Quick & Easy Weeknight Meals for 2: Southwest Cheesy Potato Bowls! I got this recipe from @MaKayla Food + Fitness💪🏼🍕 and it logged at 275 cals! 2 c frozen potatoes 8 oz ground beef 1/2 cup black beans 2 T taco seasoning (low sodium) 1 T yogurt 3 T green enchilada sauce 2 T queso per bowl 10g shredded cheese per bowl This recipe comes together super fast! I air fry my frozen potatoes for 15 mins. I cook my ground beef until browned, then add my taco seasoning with 3 T of water. I add my black beans to the pan to warm them up. I mix together my yogurt and enchilada sauce and put to the side. I dilute my queso with a dash of milk and warm in the microwave for 30 seconds. Next I assemble my bowls and top with shredded cheese, lettuce, and onion!
