Veal, Pine Nuts, Marinated Eggplant, Capers and Savory
One of the final passages in our summer “Fluctuations Menu”.
Thanks to meticulous selection by our butchers we are able to obtain a veal that is unusually tasty for this kind of animal. After being roasted in butter, and having done a gentle “nappage”, it’s left to rest. Before serving we add a sauce made from pine nuts, then fried capers, marinated eggplant and savory.
