ULTIMATE HEALTHY TUNA PASTA BAKE you will need (to serve 2) 1 tin of tuna in brine 500g passtata 1 chicken stock cube 120g frusilli pasta 1 red pepper 1 red onion 1 courgette 5-6 chestnut mushrooms 5 sun dried tomatoes Handful of fresh basil 2 garlic cloves Parmesan cheese Method 1. Prep all the vegetables into a fine dice. Sweat in a deep pan or cast iron skillet with a pinch of salt and pepper for 10 minutes until the vegetables are not watery and starting to go gorgeous and golden 2. Put the pasta into boil in salted water and remove 2 minutes early to packet instructions. 3. Mash the sun dried tomatoes, basil and garlic cloves together to form a paste. Tip into the vegetable mix, fry off for a few minutes then tip in the pasatta, 150ml water and a chicken stock cube. Simmer for 10 minutes until thickened. 4. Mix in the drained tinned tuna, the pasta. Either bake in the skillet or transfer into a deep baking dish. Grate over a generous amount of Parmesan all over. Top with black pepper and a little drizzle of olive oil. 5.
