Cranberry Curd
12oz Cranberries (fresh or frozen)
2/3 cups orange juice
1.25 cups granulated sugar
4 eggs
4 egg yolks
8 tbsp chilled Danish Creamery European Style Butter
Combine the cranberries and the orange juice into a pot and cook until the cranberries start to burst. Remove from heat and puree using an immersion blender. Strain the puree and keep aside.
Whisk together eggs, egg yolks, and sugar until pale. While whisking, drizzle in 1⁄2 cup of the hot puree to temper the eggs. Mix in the rest of the puree and return to pot. Cook on low heat until it is thick and coats the back of a spoon.
Strain the cranberry curd to catch any cooked eggs and whisk in 8 tbsp of cubed chilled butter. Cover the surface of the curd with cling wrap such that the cling wrap is touching the surface of the curd. Refrigerate overnight.
