Peanut butter cups are the #1 Halloween Candy after all—so why not turn it into the perfect fall dessert! This gluten-free/refined sugar free cake is unlike anything you’ve seen before; rich, fudgy chocolate layers that are jam packed with chopped up @unreal.snacks peanut butter cups, layered with a luscious peanut butter frosting, and topped with a silky chocolate ganache..... 🤤 I am NOT okay! Let’s just get right down to the details šŸ¤ #recipe details Ingredients: For the chocolate layer cake: -1 1/2 cups almond flour -3/8 cup oat flour -1/2 cup cocoa powder -1 tsp baking soda -1/4 tsp salt -1/2 cup date syrup -1/4 cup sugar free maple syrup -4 eggs -3 tbsp runny peanut butter -2 tbsp applesauce or pumpkin purée -1 tsp vanilla extract -1/2 cup @unreal.snacks peanut butter cups (chopped) For the peanut butter frosting: -1/2 cup peanut butter -1/2 cup dairy free cream cheese -1/4 cup date syrup -pinch of salt -1 tsp vanilla extract -1 tbsp powdered peanut butter -2 tbsp almond milk For the chocolate ganache: -2/3 cup milk chocolate chips -1/2 cup light canned coconut milk -1 tsp vanilla extract Method: For the cake: Preheat your oven to 350° F. Spray two 8-inch round cake pans with nonstick spray. Mix together the wet ingredients. In a separate bowl, mix together the dry. Fold the dry ingredients into the wet ingredients until smooth, then stir in the peanut butter cups. Pour the batter into the pans and bake for 25-30 minutes until a toothpick comes out clean. Let the cakes cool before removing from the pan. For the peanut butter frosting: with a handheld mixer, mix all ingredients together until fluffy and light, adding more milk if needed.
