Exotic nuance from Thailand straight into the Italian tradition. String Beans Capù, Combava and Green Curry Paste Capù is a traditional wrap from Bergamo area, where the chef comes from. In the tradition the external part is made with Savoy Cabbage leaves in winter and Chard in summer, the filling is meat-based. 

Here the leaf is still a chard, but inside, depending on the season: initially asparagus, now green beans, after that who knows... The filling is flavoured with green curry and combava oil.
