Ringing in #NegroniWeek with @hiddenleaf.nyc's Tablet Negroni at @manhattanwestnyc's new under-the-radar cocktail haven with drinks by internationally-renowned bartender, Iain Griffiths.​​​​​​​​ ​​​​​​​​ Griffiths' ingenious Negroni riff is inspired by Tablet candy, the creamy milk candies that are ubiquitous throughout Southeast Asia. They wanted to replicate the luscious flavor of Tablet without adding sugar or sweetness to the drink, so they take the classic foundation of gin, Campari and sweet vermouth, and clarify it by adding passion fruit puree and milk. The acid in the passion fruit reacts with the milk and binds to the solids, so when Griffiths fine-strains the mixture, what's left is a gorgeous crystal clear and blush pink-hued tipple.
