These quick and crispy vegan fritters are packed with sweet potatoes and butternut squash and make for a delicious plant-forward NYE appetizer ๐

Fritters
โ 1 1โ2 cup butternut squash, shredded
โ 1 large sweet potato, peeled and shredded
โ 1โ4 cup tapioca starch
โ 1โ3 cup all purpose flour or gluten-free AP flour
โ 2 Tbsp flaxseed meal
โ 6 Tbsp water
โ 1/2 cube Edward & Sons Garden Veggie Bouillon Cubes
โ 1โ8 tsp pepper
โ 1/2 tsp salt
Cooking Oil
neutral oil for frying, we used avocado oil
Garlic Tahini Sauce
โ 1โ4 cup tahini
โ 1โ4 cup filtered water
โ 2 tsp garlic powder
โ 1โ2 tsp salt
โ 1โ2 tsp pepper
โ 2 Tbsp water, optional for thinning out your dressing.
Directions
Place shredded butternut squash in a colander & sprinkle with 1โ2 teaspoon of salt. Let squash sit for about 20 minutes so it can release water. Wrap squash with a kitchen linen and squeeze as much liquid out of squash as possible.
Combine garlic tahini sauce ingredients in a bowl & whisk. Add additional water until you have gotten your desired consistency. Place bowl in the refrigerator to chill.
Heat a pot on medium heat & add water. Once water is warm add a Veggie Bouillon Cube. Mix until the cube has dissolved.
Add the fritters ingredients in a large bowl & stir until combined. The mix should be clumpy & not runny. If needed, add more flour.
Heat a large non-stick or cast iron pan on medium-high heat. Once hot, add the oil, about 1โ4โ deep. Scoop 1โ4 cup of the fritter batter onto the pan. Using a spatula gently flatten the fritter. Scoop 2 to 3 more fritters onto the pan. Be careful not to crowd the pan while cooking.
Fry the fritters for 3 mins, flip, and fry for an additional 3 mins. For a crispier fritter, cook for an additional minute on each side.
Place fritters on a large plate lined with a paper towel. Repeat steps until all are cooked.
Sprinkle the fritters with sea salt and serve with the garlic tahini sauce.
