As a cook you look back and recognize important dishes you've cooked that made a lasting impact on you that played a role on opening your mind to whole different level. Some might say it's the oysters and pearls by TK, some truffle explosion by Grant, or the Benedict at E.M.P. All of which is technically difficult, beautifully presented, and incredibly delicious. But for me it was the Clams and Lardo Taco by @chefraygarcia from the beautifully made tortilla, the plump clams, the crispy garlic chips, the spiced whipped Lardo it all made sense and yet it was on a TACO. It was technically driven, beautiful, and most importantly f@$!ing delicious. To me the was mind blowing enough. As my time at @brokenspanishla is closely coming to an end I can't help but to think and savor everything delicious I've ate. #clamsandlardo #blessed
