Quick & Easy Weeknight Meals for 2: Mississippi Chicken! 12 oz chicken breast 1/2 c chicken broth 1 T gravy mix 1 T ranch seasoning 2 pepperoncini peppers 1 T pepperoncini pepper juice 1 T butter I season my chicken breast on both sides with garlic powder, onion powder, paprika, and black pepper. I sear my chicken on both sides and then add the chicken broth, scraping the brown bits from the bottom of my instant pot. Next, I add my gravy mix, ranch seasoning, pepperoncini peppers, and juice, and butter. I cook on high pressure for about 30 mins and serve over mashed potatoes & roasted broccoli. If you don’t have an instant pot, you can cook this in a slow cooker or on the stovetop on low for about 6 hours.
