FRIDAY NIGHT SUPPERS - felt inspired to make something fresh, delicious and healthy for a new friend. Preparing large salads is one of my fortes but sometimes have to make this a little sexier and edible by hand! So here are my Asian beef lettuce cups packed with veggies and flavour! No real recipe but here is a rough idea:
🥬 Little Gem lettuce leaves
🍆 Sliced of roast aubergine
🫘 Green beans steamed
🥗 @sky_sprouts broccoli sprouts, sliced spring onions and coriander and mint, red chilli
🥩 @daylesfordfarm fillet steak, seared
🥜 Cashew nuts, toasted
Dressing
Juice of 1 lime
2 tbsp @wasabigrowersuk ponzu
1 tbsp fish sauce
2 cloves of garlic, crushed
1cm ginger, grated
1 red chilli, finely diced
2 tbsp olive oil
2 tbsp sesame oil

Packed with colour and flavour. @betternaturetempeh could replace the steak and just add extra soy sauce instead of fish sauce to make this plant based/ vegan! Let me know if you try this!!
