I'm just lost for words as I thought this day would never be. In the last 10 years I've been cooking no one as made a greater impact then Chef. I was fresh out of culinary school had more ego then any skill. Then Chef came and humbled me down. He thought me how to hold a knife, sear a piece of fish, create a spreadsheet, how to lead a kitchen, how to lead myself, how to push yourself to limits that you thought was impossible. Not all times were blue skies and sunshine. He thought me as well to overcome the rainy days and the icy nights. Some might say I do well in icy weather. As much as he thought me he made sure that I made the decision he gave advice never demands. He lead the way never walked behind. That hard. Work beats the popular vote. Now as I go on to the next phase I'm nervous, scared, apprehensive of the unknown. But through the years with him I learned how to look scared right in the face and bitch slap it...Thank you for everything chef. The time we spent over the stove and over a board is time well spent and I will take with me forever. I'm fortunate I got to start with you when you were all young and angry.
