Add butter, shallot, and garlic. Cook for 1-2 mins. Add orzo, oregano, tumeric, cumin, salt, pepper. Toast for a few mins. Add coconut milk, water, lemon juice. Cover & simmer 10 mins on low. Add spinach, mix, add salmon.
