Featuring a cheesy garlic queso and a zesty corn salsa, they make for a fun and flavorful main dish. • My secret to making them so tasty? @churnfoods Garlic and Shallot Butter. I brushed it on the grilled chicken and used it in my garlic queso. • Churn has 9 flavors of grass fed butter which are available online at churnfoods.com • All their cows are organic, grass-fed, and hormone-free —meaning their butter is loaded with brain-healthy omega-3 fats. • Recipe - (Makes 6) • Protein: 2 large chicken breasts salt & pepper 3 tablespoons Churn Garlic and Shallot Butter, melted • Corn Salsa: 1 (15 oz) can of sweet corn 1 medium jalapeno, diced 1⁄4 cup diced red onion 2 tablespoons lime juice salt & pepper to taste • Garlic Queso: 2 tablespoons Churn Garlic and Shallot Butter 2 tablespoons flour 1 cup whole milk 1 cup Pepper Jack Cheese, shredded 1⁄4 teaspoon Cayenne Pepper • For Serving: warm, taco-sized corn or flour tortillas • Method: Prepare the corn salsa by combining the sweet corn (drained of juice), diced jalapeno (with or without seeds), red onion, lime juice, salt and pepper in a medium bowl. Place in the fridge to chill. • Slice the chicken lengthwise into thinner cutlets. Salt and pepper each side. • Prepare your grill and set it to a medium-high heat. Grill the chicken for 4-5 minutes on each side - brushing with melted garlic butter once cooked. Remove, cover with foil and keep warm. • Meanwhile, make the garlic queso. Melt the garlic and shallot butter in a saucepan on medium heat. Add the flour and whisk until a paste forms. Keep whisking as you slowly incorporate the milk and then the shredded cheese. Add the cayenne pepper and continue to cook until a smooth and creamy cheese sauce is achieved. • Slice the chicken into bite sized pieces.
