How is it possible to feed the planet while guaranteeing good, clean and fair food for all? The answer is biodiversity. Leading up to this year’s 13th edition of #TerraMadre, we join @Slowfood_International and nearly 200 @RelaisChateaux chefs around the world to champion a hero ingredient representative of our terroir. Executive Chef @UlfetRalph of #MageeHomestead chose to invent a delicious Yellow Current Crudité, created from ingredients that came from less than 5 km radius around the Homestead: It features yellow currants harvested from the Wyoming land around Magee and honey gathered from Magee’s lovingly-tended bee hives, as well as carrots from our Greenhouse and chèvre created from the milk of our new goat herd. Here at Brush Creek we believe now, more than ever, that it is incredibly important to engage in biodiversity efforts year-round by supporting small-scale farmers and producers, reducing food waste, and looking to our local terroir for ingredients.
