brothy beans with hand pounded red sorrel and pumpkin seed pesto, lots of parm, pepper, un boiled egg. I was introduced to red sorrel leaves ages ago in hyderabad. a different time, a different love. locally called gongura, it's made into this sour-spicy pachadi or chutney that elevates dal-rice like nothing else with some ghee. in fact as soon as you blanch the leaves, the sour-tangy aroma fills the room and post grinding, it intensifies. I haven't known many other leaves with a tangy scent. funny how most things fade away with time but a certain leafy green can remain close to your heart forever and ever. I make gongura chutney all the time but today the mood took me to do some ~ fusion ~ and make it into pesto. it is so wildly different and so incredibly good
