I finally got my hands on some apricot liqueur, and the first cocktail I wanted to make with it was the Tradewinds. This drink uses a technique called swizzling to mix, dilute, and chill everything right in the glass. Swizzling is a traditional Caribbean method usually done with a bois lélé, a wooden swizzle stick made from the Quararibea tree, but a barspoon works just fine at home. To swizzle, place the spoon between your palms and roll it back and forth quickly. At the same time, move the spoon up and down in the glass to make sure you’re mixing everything evenly from top to bottom. It chills the drink with pebbled ice without shaking or over-diluting. Ingredients: • 1 oz dark rum • 1 oz gold rum • 1 oz apricot liqueur • 1 oz house-made coconut cream • 1 oz fresh lemon juice Instructions: Build directly in a chilled tiki Collins glass. Add pebbled ice and swizzle until the glass frosts. Top with more ice and garnish with pineapple fronds and a cocktail umbrella.
