Stuffed Pepper, Prawns, Polenta, Fig and Grapefruit Impressive to know how many types of peppers exists: Goat's Horn, Ribbed, Friggitelo, Roggianese, Lemon Drop, Sweet Jimmy Nardello.... These are just some of the ones that Gheorghe, one of our dearest farmers, can provide us from his wonderful vegetable gardens almost 800 metres above sea level. The one we use for this preparation is a Smooth Round. The filling it’s prawns-based seasoned with distinctly fresh elements like ginger and lime, then added with fried polenta that brings a crunchy texture. The sauce at the bottom, made from red fig pulp and grapefruit reduction, gives a bitter-sweet part that greatly lengthens the gustatory sensations and contributes to full balance. Before serving it’s cooked for few minutes in our charcoal oven to roast it lightly and add a pleasing smoky flavour. Now close your eyes: can you imagine all these different layers of flavor?
