Shiso pesto-tomato dashi soba.
i saw @h.kouga posted this tomato-scallop soba a few weeks ago and immediately bugged him what does it taste like. he explained that it’s soba dipping sauce w shiso genovese (pesto). i kept watching his story on this dish over and over again. i’m tenacious when it comes to food (you prob know that by now)
A very simple dish so i needed really good ingredients. Luckily @tintin_beligan_ gifted me her gardens tomatoes which was super sweet and beautiful, and i got plumpy fresh scallop from @luxeseafood.
prep:
Scallop: grilled with some sea salt
tomatoes: peeled and cut bite suzes soaked in shirodashi for 30-45 min
mix scallop and tomato with pesto add chopped kajiware sprouts.
soba: cook according to the package, then mix with shiso pesto, top it off with tomatoes and scallop, then pour dashi made from kombu, katsuobushi, anchovies and tomatoes.
This is definitely an umami packed summer dish! i wouldn’t have imagined pest and dashi works this well.
