I’m calling this one the House on Fire. It’s essentially a simplified Zombie. I felt like playing around with fire and showing you how to do one of the most crowd pleasing garnishing I know of. House on Fire ———— • 0.75 oz lime juice • 1 oz pineapple juice • 0.5 oz Demerara syrup • 0.5 oz apricot liqueur • 1 oz dark rum • 0.5 oz overproof rum Shake with ice and strain over pebbled ice. Flaming Lime Garnish After juicing your lime, save the shell and set it on top of the drink. Pour a little overproof rum directly into the shell, light it with a torch, and sprinkle cinnamon on top for flames and sparks.
